Saturday run, Monday lunch

Saturday morning’s run went ok. We ran about 6.7 miles in 1 hour and 35 minutes I think. Not my best run time and we miss judged the halfway point. I definitely need to start running during the week again. Me knee was starting to ache right at the end so we walked the last quarter of a mile.

On Sunday I made a yummy chicken salad for lunch with left overs for Monday’s lunch. It was so yummy. I really love chicken, apples, and green grapes. Who knew fruit went so well with chicken. It was also a great paleo lunch option.

Here is what was in my salad
-chicken
-green grapes
-honey crisp apple
-mayo
-hardboiled eggs
-dash of garlic salt and onion powder
I think next time I might try adding some diced onion to it. What variations do you try?

A few of my favorite things. Paleo first

I decided to start back up my blog by writing about some of my favorite things right now. The first one is going to be about eating paleo. It all started one day at work during lunch. As I was waiting to heat up my lunch one of my co-workers had just taken something out of the microwave that looked really good. When I asked her what it was and she said it was her left overs from diner the night before. I told her it looked good and she continued to tell me that it was a 6 week meal challenge called the Paleo Challenge. So I decided to look into it some more. I had just had a baby in the last 5 months and wanted to do something to help loose that weight and just be healthier in general.

I started the 6 week challenge and followed the first 3 weeks of the plan. By week 3 I was feeling pretty good and not craving food as much as I used to. I continued to keep eating paleo, for the most part, after the 6 weeks were over. I had been training to run a 10K with my friend and I just felt so much better I figured why go back to the way it was. So it’s been about 9-10 months since I started. I’ve lost about 20-25 lbs and am in the smallest size clothes I have ever worn. I feel great and it’s very exciting to be able to find clothes that fit me right. I had to go buy some new pants recently and found 4 pairs that I liked, and still like. Usually I try some one find one pair I think are ok, maybe 2 and then get home and a week later I don’t like the fit. The only problem I have now is I don’t really have a lot of clothes that fit. So I have to figure out a way to remedy that without spending a ton of money.

I should also mention that for the most part I have continued to eat paleo and pretty much made it a lifestyle change. I do still have the occasional wheat item, however I did not return to my previous way of eating. That might not be for everyone but it might help you feel better while you get your exercise routine down. What worked for you when trying to loose baby weight or just get in shape?
